選用的臺南後壁越光米 コシヒカリ，是與臺灣大學技術合作所改良的日本越光米種，擁有96%日本越光米種DNA。因為日本緯度較高、日照較短，所以日本越光米在臺灣日照較長的耕種環境下，導致生長期縮短，品種不若日本種好。改良針對稻米對光線的敏感度、延長生育期，讓米飯口感接近日本產的越光米品質。
